Fresh blueberry syrup

So fresh blueberries and how to make a syrup from them. I start with about 18oz of blueberries (Fresh) save half of them for the pancake mix. Melt 1 Tbs of real butter on low -med.


When the butter is melted add your fresh blueberries. You will see the berries break down and melt. Add, 2Tbs of Corn syrup and 1tsp Vanilla extract.


 When this really starts to bubble you will see the skins separate from the squishy sweet center of the berry. When you see this its time to add fresh lemon. I used a small lemon cut in half and squeeze gently don't add the seeds. Let simmer for about 3-4 minutes. It should look like this.





What ever you do, if you see a recipe that calls for cornstarch don't use it. It will thicken but so does letting it reduce. Let it cook slowly on low... it will thicken perfect and not compromise the flavor.


18 oz   Blueberries
1Tbs    Real Butter
2 Tbs   Corn Syrup
1 tsp    Vanilla Extract
            Juice of a Lemon
